Smash Chicken Shawarma Pita
The Method
This Smash Chicken Shawarma Pita combines the irresistible, crispy texture of the viral smash trend with the warming, aromatic profiles of Middle Eastern cuisine. It is a texturally satisfying meal that feels indulgent but is carefully designed to be gentle on your system, offering a satisfying crunch without the post-meal heaviness.
Why Your Gut Needs It:
We swap standard frying oils for garlic-infused olive oil, providing that essential savoury depth while remaining low-FODMAP friendly to minimize bloating. The addition of tahini offers healthy fats that aid in nutrient absorption, while the spices in the shawarma blend—specifically turmeric and cumin—provide gentle anti-inflammatory support to soothe the digestive tract.
Method
- Prepare the Mince Mixture: In a mixing bowl, combine the chicken mince, mustard, chicken stock, soy sauce, and the shish spice blend. Mix thoroughly until the spices and liquids are evenly distributed throughout the meat.
- Smash the Pita: Divide the seasoned chicken mixture into equal balls (one for each pita). Place a ball of meat onto the centre of a pita bread and press it down firmly, spreading it out to the edges in a thin, even layer.
- Fry to Crispy Perfection: Heat a drizzle of garlic-infused olive oil in a frying pan over medium-high heat. Place the pita meat-side down into the hot pan. Press down with a spatula and cook for 3-4 minutes until the chicken is golden brown, crispy, and fully cooked through.
- Finish the Shell: Flip the pita and cook the bread side for 1-2 minutes until warm and slightly toasted. Remove from the heat.
- Assemble and Serve: Spread a generous layer of hummus and tahini over the cooked chicken. Top with your Mediterranean salad and a fresh sprinkle of coriander. Fold and enjoy immediately.
Steph's Tip: For extra gut support, opt for a spelt or gluten-free pita if you are sensitive to wheat. If you can't find a shish spice blend without cinnamon, a mix of cumin, coriander, paprika, and turmeric works beautifully to create that authentic shawarma flavour profile.
